Those who eat oysters do so because they enjoy the texture and flavor of them. An additional benefit is that oysters, such as Gulf oysters, also provide a resource for many necessary nutrients. As it is with so many good things, there can be drawbacks. Oysters can be a source of a bacteria that is especially dangerous to people that have liver disease, diabetes, or are in an at risk group. Being aware of the dangers, properly preparing the oysters, and knowing about at risk groups will help us all be oyster aware.
